Cranberry Oatmeal Cookies

These cookies are delicious! I like to keep dried cranberries in my kitchen cupboard, that way I always the ingredients on hand, You can also add chopped pecans or white chocolate chips too... You will bake these cookies at 350 degrees for 10-12 minutes.

Ingredients

You will need, 1-3/4 cup Oatmeal, 2 cups Flour, 1 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, 1 stick margerine, 2 eggs, 1 cup white sugar, 1 cup packed brown sugar, 1 tsp vanilla, and 1 cup dried cranberries.

Mix Dry Ingredients

Pre-heat oven to 350 degrees. In a large mixing bowl ,combine the oatmeal, flour, cinnamon and salt.

Mix Eggs and Sugars

In a medium sized mixing bowl, combine the eggs, sugars, vanilla and margerine.

Combine All Ingredients

Pour the egg mixture into the bowl with the dry ingredients. Stir until thoroughly combined.

Add Cranberries

Stir in the dried cranberries

Bake Cookies

Spray the cookie sheet with non-stick spray. If you place the cookie dough on the cookie sheet like I did, you can get 13 cookies on it instead of 12. This is called a "Bakers dozen". Bake for 10-12 minutes. Take the cookies out of the oven and allow to cool on a baking rack.

After the cookies cool, Seal in an airtight container.
