Craisin-Chocolate Chip Muffins

This is a particular favorite of mine; I've always loved the combination of Craisins and chocolate, and muffins have been a longstanding delight for me. While thinking of a project to work on, I got this brilliant idea to combine the two to make these. This simple recipe will help you to conjure delicious, but not too sweet, fulfilling muffins.

Ingredients/Materials

The following yields about 24 muffins:

- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup (one stick) butter (room temperature)
- 1 cup brown sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 1 cup milk (2%)
- 1 1/2 cup Craisins (dried cranberries)*
- 1 1/2 cup chocolate chips*

*These measurements can vary, depending on your preference.

Also, you could use:

- a whisk/beater
- two large bowls
- measuring cups/spoons
- a fork/spoon/spatula (optional)
- muffin cups
- a muffin pan

Before Starting

Preheat the oven to 375 degrees Fahrenheit, and prepare the muffin pans with grease or paper muffin cups.

Mix It

Combine all of the dry ingredients (4 c flour, 4 t baking powder, and 1 t salt)in a bowl, and set it aside.

Beat It

In another bowl, beat the 1/2 c butter with 1 c sugar until is is light and fluffy. Then beat in the eggs, and stir in the vanilla extract.

Fold It

Fold in the dry ingredients previously prepared, alternating with milk. When all of the dry ingredients are combined with the wet ingredients, fold in the 1 1/2 c Craisins and 1 1/2 c chocolate chips.

And now, spoon the batter into the prepared muffin pans, and bake it in the preheated oven for about 25 mins, or until a toothpick comes out clean when inserted in the center of a muffin. Cool the muffins on a rack, and enjoy! (If you'd like these muffins to last, you can freeze them.)
