Courgette and Fennel Soup
This delicious courgette soup is made with chopped courgette, fennel, onions and potatoes, the soup is flavoured with garlic, rocket and parmesan, and blended till smooth. This winter warming soup is served with a sprinkled of chopped parsley and some warm crusty bread
Supplies
Utensils
1 chopping board
1 large knife
1 large pan
1 chopping board
1 hand liquidiser
1 Garlic crusher
1 grater
1 jug
Ingredients
2 sprig fresh parsley
50 grams butter
1 courgette
100 ml double cream
1 bulb fennel
1 cloves garlic
1 onion
20 grams parmesan or pecorino cheese
150 grams potatoes
20 grams rocket leaves
1 stock cube veg
750 ml water (boiling)
salt and black pepper to taste
peel and slice the potatoes
peel and chop the onion(s) finely
wash and slice the fennel into strips
peel and crush the garlic using the garlic crusher or chop finely
heat the butter in a pan
add the onions, potatoes, fennel and garlic to the pan, cook until soft
boil the water and add to the stock cube
add the stock to the pan
Bring to the boil and boil for a few minutes
simmer for 15 minutes
wash and dice the courgettes add to the pan
add the rocket to the pan
cook for 5 minutes
remove the pan from the heat
using a hand blender liquidise the soup until smooth
Add the cream to the soup
Return to the heat and warm gently do not boil
grate the parmesan
add the cheese to the soup
stir to mix the ingredients
season with salt and pepper
ladle the soup into serving bowls
Chop the parsley
sprinkle on top of the soup to serve
