Cornflakes Cookies

-I tried cookies with cornflakes which are so simple and easy to make. they were crispy outside and crunchy inside.

Ingredients:

-All purpose flour half cup

-Unsalted butter 1/4 cup

-sugar 1/4 cup

-cornflakes 1/2+1/4 cup

-Baking powder 1/8tsp

-pinch of salt

-vanilla essence

Preparing the Dough

-In a mixing bowl add butter ,sugar, vanilla essence and beat with a whisk until creamy and fluffy.

-sieve All purpose flour and baking powder.

-Blend cornflakes with short pulse in blender or you can put in ziplock bag and crush with rolling pin.

-Now add 1/2 cup of crushed cornflakes to APFand mix.

-Next step is to add flour to butter,sugar mix.

-Mix everything and knead to soft dough

-No need to use any water.If dough is very crumbled you can add a tsp of water or else not required.

Refrigerate

-Refrigerate the dough for 15 to 30 minutes.

-Later remove and roll in to cylinder shape and cut equal slices.

Make Balls and Roll in Corn Flakes Mixture

-Make balls and gently flatten them by pressing in your palms.

-Roll in cornflakes mixture on both sides.

-( if corn flakes mixture does not stick just apply little water using your palm on cookies and then spread.)

Baking

-Bake at 170 degrees for 15 minutes.

-when you see the corners getting brown remove them.

-they will be initially soft but after drying become crispy.

-Remove the cookies and place on drying rack.

-store in air tight container.
