Corned Beef Sandwiches - Love 'em!

I had these for lunch today. I really did! The leading photo was taken moments before I ate these hot corned beef sandwiches. And they were really good.

I chose to heat them up in a sandwich press but you can equally enjoy them fresh, not toasted.

Ingredients

For these yummy sandwiches you'll need:

  • Sourdough Bread
  • Corned beef - sliced (we picked ours up from the Deli)
  • Cheese - sliced
  • 1 Onion - sliced
  • Butter
  • Dijon mustard
  • Salt and pepper to taste

Ok, so our main purpose in making these sandwiches is to provide some ready-to-go lunches.

We're making 12 sandwiches so to stream-line this process, lay out the slices as shown. Butter each slice of bread then spread a thin layer of dijon mustard. We chose not to butter the lids.

These sandwiches are made in layers. Place your sliced corned beef on the bread then add salt and pepper to your taste preference.

We're half way there already...well done you!

Place your sliced onion on the corned beef. Because this onion is raw, you may want to slice it very thin, or use red onion which is milder.

On With the Cheese

Place your cheese on each slice. We've used Colby but select the flavor you enjoy.

Top It Off

Place your top slice of bread to complete each sandwich.

We went ahead and bagged up enough sandwiches to make lunch meals...two sandwiches (four slices of bread) would probably have been sufficient, but we opted for three sandwiches due to one of the mouths destined to eat these being 19 years old and perpetually hungry.

Place your lunches in the freezer.
