Copycat Starbucks Pumpkin Bread

This is my copycat Starbucks Pumpkin Bread. It is as close as you will ever get. I don't do the pumpkin seeds on top.

Supplies

Hardware:

2 mixing bowls (1 large & 1 small)

1 whisk or hand mixer

Spatula

measuring spoons

measuring cups

Loaf pan/cupcake pan

Portion scoop/ice cream scoop

Ingredients:

1.5 cups of flour

1 tsp baking soda

1/2 tsp salt

1/4 tsp nutmeg

1/4 tsp clove

1/2 tsp cinnamon

2 tsp pumpkin spice

1 cup white sugar

1/4 cup brown sugar

2 eggs

1/2 cup butter melted

1 can pumpkin

2 tsp vanilla extract (the good stuff)

Preheat Oven to 350 Degrees

This is also a good time to grease your pan(s). I used some melted butter.

Mix Dry Ingredients

Mix the first 7 ingredients in a small mixing bowl.

The Batter

Start with your melted butter.

The Sugars...

Add the white and brown sugar to the butter.

Eggs & Vanilla

Add the eggs one at a time and the vanilla.

Mix

Your batter should be paler in color at this point and well incorporated. Make sure to scrape the sides of the bowl!

Pumpkin Time!

Add the pumpkin and combine. Isn't this a cool swirl I got when I began mixing?

Add the Dry Ingredients

Once the pumpkin is incorporated add the dry ingredients to the batter.

When incorporating the dry ingredients make sure not to over work your batter. This is how it show look once everything is combined.

Put Into Pan(s)

So now it's time to put the batter into the pans, I like to use a portion scoop (like an ice cream scoop). Make sure you even out the batter!

I baked these mini loafs for 35 minutes. 1 large loaf takes about 1 hour. Enjoy!
