Cool Ranch Buffalo Wraps

I love chicken wings. But lets face it they are not the most healthy choice for dinner. So in our search for a healthy chicken wing alternative we (my wife and I) created our "health chicken wing wraps"

Gather Your Ingredients

2 or 3 boneless skinless chicken breasts cut into strips

1 tbsp olive oil

Salt and Pepper

1 romaine lettuce heart washed and separated into individual leaves

Buffalo sauce (we use Franks Red Hot Buffalo Wing sauce)

Low Fat Ranch

Blue Cheese crumbles

Something crunchy (we use Black Bean crunchers in the ingredient pic above)

Cook Your Chicken

Get your 12 inch non stick frying pan. Add chicken and olive oil to pan and toss to coat ... salt and pepper to taste). Cook on medium-high for 6 to 8 mins or until chicken is almost done (remember chicken is suggested to have internal temp of 165F and juices run clear). Reduce heat to medium. Add buffalo sauce to pan, toss chicken to coat, and let simmer. Stir chicken to coat other sides and simmer until the sauce reduces to only coating chicken.

Remove from heat.

If you aren't comfortable with cooking raw chicken you can use pre-cooked chicken strips and add the buffalo sauce as soon as you put the pre-cooked strips in the pan.

Or this step could be done by grilling the breasts and slicing into strips after they are done.

Assemble Your Wraps

Technically they are more like lettuce tacos or boats.

Add chicken to lettuce.

Sprinkle on blue cheese or cheese of choice.

Top with ranch or dressing of choice.

Sprinkle with your something crunchy.

ENJOY!

Experiment with it ... It could be teriyaki chicken with mushrooms and sriracha or ginger dressing.
