Cooking Pizza in a Wood Fired Oven
There are loads of wood-fired pizza ovens on that market and even more resources on how to build your own.
I have recently purchased a unit just like this. For me, it has been great due to its transportability and ease of use!
Supplies
Wood Fired Pizza oven
Light the Oven
depending on your oven you will want to light the fire 2-3 hours prior to cooking. In an oven like mine 2 hours is sufficient as that is enough to get it as hot as it seems able to get (around 300C). In a clay/cob or brick oven, you will want to allow longer to get the cooking surface and dome heated through and the wood has burnt down to coals!
You will want to use wood which burns hot and slow. I am in Australia and find Black Wattle to be an excellent fuel but have also used various other hardwoods with good results!
Time to Cook
When your oven is between 300-350C you are ready to cook.
Push your coals to the rear of the oven. Put your pizza in front of the coals and rotate every 10-15 seconds to avoid burning the crust. depending on the amount of toppings you can expect the pizza to be cooked in around 3 minutes!
Enjoy!
