Cookie Pi Crust

As I was growing up, when my Mom would make pie, she would always take the left over scraps from the crust and made what she called “Cookie Crust”.  That was almost better than the pies.  I carried on the same tradition with my own children.  Although none of them bake, let alone bake pie with homemade crust, they sure enjoy it when they come home and I pull a “Cookie Crust” out of the oven.  Today, in honor of “Pi Day” I have made “Cookie Pi Crust”, and this is how simple it is.

Supplies:
Raw pie crust dough (your favorite recipe)
Butter (room temperature)
Cinnamon sugar
Cookie sheet
Spatula
Rolling Pin
Paring knife
Extra flour
Paper Pi pattern, in the size you want

Preheat oven to 350°.

Sprinkle the clean counter top with some of the extra flour.

Roll out the pie crust dough to ¼ inch thickness.

Lay the paper “Pi” on top of the dough, and with a sharp paring knife, cut out the “Pi” shape in the dough.

Pull the excess pieces away from the “Pi” shape and carefully transfer the dough “Pi”  to the cookie sheet.  Roll out the rest of the dough and cut out as many “P’s” as your dough will allow.  I was able to get two large ones.

Using the spatula or a butter knife spread the soft butter all over the dough “Pi”.

Using a spoon, sprinkle the cinnamon sugar all over the butter.

Put the cookie sheet in the preheated oven, and bake for 15 minutes.
When the time is up, pull the cookie sheet from the oven and place on a cooling rack, until the Pi’s are cool enough to eat.  Yum!

Take the left over scraps of pie crust dough and do what my Mom always did, roll it out in kind of an oblong. Place the dough on a cook sheet, and cover it with butter, then cinnamon sugar and bake at 350° for 15 minutes.  Once baked, cut into squares and Enjoy!
