Coffee, Caramel and Walnut Streusel Cake

A streusel describes a crumbly topping that is baked on top of a bun, muffin or cake.

Our streusel is made with a base of sourdough that has coffee flavor baked into it. It's topped with breadcrumbs, caramel and walnut and is a satisfying cake to eat.

Let's get started.

Ingredients

For the base you'll need:

  • 135 g flour
  • 30 g Sourdough Starter
  • 2 g instant coffee (or 2 tablespoons of fresh ground coffee which is nicer)
  • 150 g water plus a tablespoon for the coffee
  • 80 mls fruit juice concentrate

For the topping you'll need:

  • 2 tsp cider vinegar
  • 1/3 teaspoon of baking soda
  • 50 g of melted butter
  • 1/3 Cup of very dry Sourdough Bread Crumbs
  • 1/2 Cup of chopped walnuts
  • 1/2 Cup of caramel

Add a tablespoon of boiling water to the instant coffee. A better alternative is 2 tablespoons of fresh strong coffee.

Fermenting the Dough

Place the flour, mother starter and fruit juice into a bowl. Add the coffee and 150 g of water then mix together. Scrape down the sides of the bowl and leave it overnight for the fermentation to work through.

Finishing the Dough

If your fermented dough has developed a skin on top stir this in.

Melt the butter and stir in the baking soda. Pour this into the bowl with the dough then add the cider vinegar and give it a final stir.

Making the Topping

Tip the bread crumbs into a bowl and add the walnut and caramel. Mix together - and if you don't mind getting sticky use your hands.

Into the Tart Shell

Pour the fermented dough mixture into a lined tart shell.

Sticky Warning!!! Bring out the bowl of sticky sprinkles and cover the whole mixture with the walnut/caramel/bread crumb sprinkle.

Cook your streusel for 40 minutes at 180 C (360F) then remove from the tin.

Show you friends how big it is by balancing it on your hand then cut it up and enjoy.

Pro tip: Serve this with a dollop of fresh whipped cream or maybe one of these great ice-cream flavors.
