Coconut-fried Mozzarella Discs, From Scratch

This was inspired from a mozzarella stick recipe, but I had fresh mozzarella slices and made my own italian bread crumbs from scratch. This is the Foodie version of fried mozzarella sticks, using coconut oil for frying, raw milk and fresh chicken eggs... you get the gist. ; )

Bread Crumbs

Slice some artisan bread and lightly bake in oven until crunchy. You want to remove most of the moisture.

1. Spices that I used and approximate amounts. You can use this as a guide to create your own mixture.

(salt, parsley, black pepper, garlic powder, oregano, basil, dill)

2/3. Combine spices and put diced-up, lightly toasted bread slices into blender.

3/4. Combine bread crumbs and spices.

Flour Mixture

Paprika, flour and dill.

Your amounts will vary depending on how much you are frying, use the ratios above as a guide.

Wet Mixture

I used delicious raw milk(2 Tbl) and freshly-laid eggs.

The consumers appreciated this.

Whisk to combine.

Dip, Coat, Dip, Repeat

Dip mozzarella into flour mixture, then into wet stuff, then into bread crumb mix.

Then, do it again(mostly).

Dip into wet, then bread mixture.

Put into plate, then put on ice in freezer for about 30 minutes.

Fry

I only had Dr. Bronner's coconut oil(poor me)

: D... Yum!

Deep fry for about 45 seconds, then flip.

I used a grid rack over paper towels to place discs after frying.

Serve Immediately With Red Sauce

Best if eaten as hot as possible, with heated red sauce(marinara or your favorite pizza sauce)

My consumers thought it was the best fried mozzarella they had ever had!

Mission accomplished!!
