Coconut Thai Curry Gnocchi
Gnocchi is a favorite in my kitchen and I know that this creamy coconut Thai curry gnocchi is a must try! I know that some of you are thinking how can it possibly be any good if it doesn't have dairy and it is healthy? Well it doesn't need the dairy to be creamy because the coconut milk makes this dish so creamy. I know that this isn't authentic Thai or Italian food but is still is a great combination of both cultures. This recipe is also great because you can really change it up and make it cater to your own taste. Ingredients and Tools
Ingredients
- 1 package Potato Gnocchi (4 servings)
- 2 Tablespoon Olive Oil
- ½ Yellow Onion (thinly sliced)
- 1 minced Garlic
- 5 Mushrooms (thinly sliced)
- 10 Cherry Tomatoes (cut in half)
- 2 Tablespoon Red Thai Curry Paste
- 1 can Coconut Milk (regular, full fat)
- 1 teaspoon Sugar
- 1 Cup Spinach Leaves
- ¼ teaspoon Soy Sauce
- Salt and pepper to your taste
Tools
- Ladle
- Cuisinart Cast Iron Dutch Oven
- Cuisinart Oven Mitts
- Pyrex Mixing Bowl
- Pyrex Bowl 3 set
- Misc. Kitchen Utensils
Boil Water
Bring a large pot of water to a boil. Add salt and gnocchi. Boil gnocchi to your package instructions.
Starting the Sauce
In a heavy bottom sauce pan add oil and heat it up on medium heat. Once the oil is hot add onions and minced garlic. Sauté in olive oil for 2-3 minutes.
Add Mushrooms and Tomatoes
Next add in your mushrooms to pot and sauté until oil absorbed. Add in your tomatoes and sauté for 2 minutes.
Adding Thai Paste and Coconut Milk
Add red Thai paste and a full can of coconut milk. Stir in sugar and soy sauce.
Stir and Add in Spinach
Give the sauce a good stir. Add in spinach leaves and stir until everything is combined. Add salt and pepper to your taste and simmer 5 minutes. Once the gnocchi are done, drain them and add to the sauce, simmer everything together for 5 minutes. Enjoy!
Season to Perfection
Add salt and pepper to your taste. Stir sauce and simmer 5 minutes.
Add Gnocchi
Once the gnocchi are cooked to package instructions, drain them and add to the sauce. Stir until combined and simmer everything together for 5 minutes.
Enjoy!
