Coconut-Lime Donuts! ♥ [VEGAN]

It has been quite some time since I posted a recipe! I am back today to share with you a fun, summery treat that's perfect to share with family and friends.

This recipe was adapted from the cookbook, "Chocolate Covered Katie." I absolutely love her recipes and the fact that they are healthier and easy to make! Who doesn't love donuts?

These are Coconut-lime, inspired by the Lemon Doughnuts recipe in the book. They are also vegan, contain much less sugar, and can easily be made gluten free as well.

I will include substitutions for those of you with allergies, because I want everyone to be able to enjoy these delicious treats!

P.S. You will never be able to tell these are healthy...at all!

Let's get started with ingredients ---->

INGREDIENTS

DONUTS
1/2 C NON-DAIRY milk (I used almond!)
2 TSP grated lime zest*
3 TBSP lime juice*
3/4 TSP vanilla extract
2 1/2 TBSP coconut oil (any oil you like works as well!)
1 CUP spelt or all-purpose flour**
1/3 C + 2 TBSP sugar***
1 1/2 TSP baking powder
1/4 TSP salt

*You can use lemons instead of limes if you'd like, or even oranges!
**To make this GF, substitute with your GF flour of choice. If it doesn't already include xanthan gum in it, add 1/2 TSP.
***If you'd like, you can use stevia blend, or any sugar substitute. I used the Stevia blend, and split the amount as it is much sweeter than sugar.

GLAZE
1 C powdered sugar
1-2 TBSP non-dairy milk
1/8 TSP vanilla extract
1/2 TSP lime/lemon zest (optional)

Mixing the Wet Ingredients

Add the milk, zest, juice, vanilla, and oil in a measuring cup or small bowl, and whisk until smooth.

Let sit for 5 minutes.

In the meantime, you can prepare the dry ingredients! -->

Add the flour, sugar, baking powder, salt, and coconut flakes (if adding) into a medium sized bowl, and whisk until everything is completely combined.

Making the Batter

Pour the wet mixture into the dry, and mix together until just combined.

Scoop the batter into a gallon sized ziplock bag, and secure it by lightly twisting the bag. (This is an easy way to get the batter into the pan!)

Filling the Pan/baking

Preheat your oven to 375 F

Spray a 6-donut mold baking pan with nonstick cooking spray, or grease with butter/oil.

Cut the end of the ziplock bag (about 1-inch) and pipe batter evenly between the 6 donut holes.

*Even if it looks like there is too much batter in each hole, don't hesitate to save any. This will ensure you get super fluffy donuts, unlike mine, hehe*

Tap the pan lightly on a leveled surface to distribute the batter evenly, then place into your oven and bake for 15-20 minutes.

The donuts will be done when they are lightly browned and a toothpick inserted comes out clean.

Cool completely before icing.

Making the Icing/decoration

To prepare icing, it's really super simple! Just whisk all the ingredients in a bowl and set aside to decorate your donuts!

To make the toasted coconut, heat a small skillet on medium-high heat, and stir your coconut flakes until they are golden brown and crispy.

Finishing the Donuts!

Dip the donuts in the icing, lightly turning them around to remove excess, and place onto a bowl to set.

Top with the toasted coconut, and extra grated lime zest if you'd like.

These are all done and ready to eat!
