Coconut Curry Beef Stew!
I know it sounds gross, but this coconut curry beef stew is awesome!
I used a slow cooker, but you can cook this in a big pot over the stove. Stews are very customizable, so just throw in what you like. The coconut milk and curry powder is what really makes this stew good.
You'll need
-Slow cooker (or big pot)
-800 grams of beef (any meat will work)
-1 can of coconut milk
-1 can of kidney beans (or your favorite)
-1 large carrot
-1 large sweet potato (or any potatoes)
-1 small onion
-200 grams of shiitake mushrooms (or any mushrooms)
-3 green peppers
-3 1/2 cups consomme (or any broth)
-3 garlic cloves
-1 teaspoon salt
-1 teaspoon cumin
-4 tablespoon curry powder
It's stew, so you can also add
-broccoli
-corn
-tomatoes
-spinach

Super tips:
If you're using a slow cooker, I think it's better to boil the carrots, potatoes and beans first to soften them up.
You can also combine and simmer the wet ingredients and spices in a saucepan before adding it to the slow cooker.
If you want to make this over the stove, just dump everything in a big pot and cook it until the meat is finished and vegetables are tender.
Layering the Slow Cooker!
For a slow cooker the cook times are:
3-4 hours on high
7-8 hours on low
On a stove top:
1 1/2 hours on simmer
**Again if you're using a slow cooker, it's best to boil the potatoes, carrots and beans first to soften them up!
Layering the slow cooker is easy!
1. meat
2. spices
3. veggies
4. strained beans
5. coconut milk
6. broth
Finished!
I slow cooked this for 8 hours.
Check the carrots and potatoes before serving. A fork should easily slide through when they are properly cooked. If they aren't cooked, you can transfer the stew to a pot and simmer.
The Turmeric Rice!
This coconut curry beef stew taste awesome with turmeric rice.
Ingredients
-300 grams rice
-480ml water
-1 teaspoon turmeric powder
-1 tablespoon butter
I used a rice cooker, but you can make it in a saucepan.
One cup (128 grams) of rice takes about 17 minutes to cook. This will take 17-30.
Bring the water to a boil, add the butter, turmeric and rice. Allow it to return to a boil and then reduce heat to a simmer and cover. Check it at 17 minutes to see if the rice is tender...I'm using the word tender way too much! If it's getting there, stop the heat and let it sit covered until it's finished absorbing the water.
