Coconut Cowboy Cookies

These are Oatmeal Chocolate Chip Cookies like you've never had with the addition of a few healthful ingredients and some coconut! I am asked for this recipe repeatedly by absolutely everyone who has one. They are honestly THAT good!!

The Ingredients!

1½ cups (317 grams) light brown sugar, packed

1 cup (226 grams) non dairy butter (Ex: Earth Balance baking sticks), softened

1 tsp (15 ml) pure vanilla extract

1 flax egg (3 tbsp/45 ml water mixed with 1 tbsp/15 ml ground flax seeds)

2 cups (180 grams) quick cooking oats

1 cup (132 grams) all purpose flour

½ cup (66 grams) spelt flour

1 tsp (15 ml) baking soda

¼ tsp (3.5 ml) salt

⅓ cup (31 grams) coconut

½ cup (36 grams) walnut pieces (or ½ cup broken up pretzels chocolate chip size if nut free)

½ cup (90 grams) chocolate chips

Make Your Dough!

Preheat your oven to 350. Line two cookie sheets with parchment paper or use unlined stone cookie sheets. Using an Electric Stand Mixer, mix the non dairy butter and brown sugar until creamy and fully blended. Add vanilla and flax egg and beat until light and fluffy. Stir in oats, all purpose and spelt flours, baking soda, salt and coconut and mix until just incorporated. Finally add your chocolate chips and walnuts and stir to combine. Place golf ball sized balls of cookie dough on your stone or other cookie sheet and flatten slightly.

Bake Your Cookies!!

Bake for 14-15 minutes until the tops are firm and edges golden. Remove from the oven and allow to cool for 5 minutes. Welcome to your new favourite cookie!
