Coconut Chocolate Cookies
Hello everyone!
I'm Helen. As my husband says "you're alway doing simple things in a complex way". According to his words, all my recipes are very intricate and people have not much time to repeat them. People wants to get recipes when they can put everything in one bowl, mix, put on the pan and bake in oven. Set timer to the 15 minutes, or even better … for 15 seconds. After this get the perfect "culinary masterpiece". That is why I adore winter holidays. We can gather all family together, take some rest from work and, of course, cook something tasty using recipe taken from the backlog. This is not that cookies, which could be made in 15 minutes :) but result will impress you much. You can made this cookies involving all family members, chattering during the process and you will spent a great time.
For cookies we'll need to prepare a chocolate dough and coconut filling. So, let's start.
Chocolate Doug: Ingredients
* 120g dark cocoa powder
* 400g white sugar
* 120g unsalted butter
* 4 whole eggs
* 2 tsp vanila extract
* 1/2 tsp salt
* 2 tsp backing powder
* 250g flour
Chocolate Dough: Step 1
Put cocoa powder with sugar, softened butter and vanilla extract into the mixer's bowl. Mix on the low speed until all stuff uniformly mixed.
Chocolate Dough: Step 2
Turn on the mixer on low speed, add one egg at the time and do not interrupt mixing process until you get a smooth creamy mixture. Scrap the bowl and make sure that mixture is consistent, turn on mixer one more time, if needed. See photos for the reference.
Chocolate Dough: Step 3
In the separate bowl, mix the flour with baking powder and salt. Add this to the mixer's bowl and continue mixing.
Put the dough into a plastic bag and make it chill in freezer for ≈1 hour.
Coconut Filling: Ingredients
* 300g coconut flakes
* 75g coconut cream
* 250g condensed milk
* 1 tsp vanila paste
* 60g egg whites
* 1 pinch of salt
Coconut Filling: Step 1
Mix the condensed milk, coconut flakes, coconut cream and vanilla paste in the mixer's bowl on the low speed.
Coconut Filling: Step 2
In the separate bowl, wipe the egg whites with a pinch of salt until hard peaks. See photos for the reference.
Coconut Filling: Step 3
Add wiped egg whites into the mixer bowl and mix on the low speed.
Making the Coconut Chocolate Cookies
Preheat oven to 175 ˚C.
Take the chocolate dough from the freezer.
Scatter the table surface with a flour.
Roll 1 tablespoon of dough into a ball and put on the working surface, scattered with flour. Squash the dough balls. Put ≈1 tsp of the coconut filling in the middle of the formed chocolate dough and wrap it. Place on the cookie sheets about 2 inches apart. Bake in the preheated oven for 15-20 minutes. Let cool for 2 minutes and then move to a cooling rack.
Also you can sprinkle cookies with the coconut flakes, before baking. If you decide to do this, please moisture the cookie surface with the water.
Note: Baking time depends on cookies size, smaller one will be ready a bit faster.
Trick 1
Maybe someone will tell that this recipe is very intricate. But…
From the chocolate dough you can make a marble cookies. Take and roll 1 tablespoons of dough into a ball and dip in powdered sugar. Place on the cookie sheet. This stage could be made by children, they enjoy with rolling the dough in the powdered sugar and making "perfect" shaped circles on the baking sheets.
Bake at 175 ˚C 15-20 minutes.
Trick 2
Also you can use coconut filling itself and make a coconut cookies. All that you need is to form the balls and squash them on the baking surface, making ≈ 7 cm in diameter and ≈ 1cm thick.
Bake at 160 ˚C for 17-25 minutes. Take off from the oven once surface appears golden brown.
Note: Baking time depends on cookies size, smaller one will be ready a bit faster.
Result …
In the end, you'll get a three different cookie types. Is it simple … or my husband is right and I'm doing simple things in a complex way?
