Coconut Chia Seed Pudding

This is super-duper easy recipe for coconut vanilla chia seed pudding. All you need is a few ingredients, 5 minutes, and a desire for a delicious snack that can creep others out!

This recipe does take only about 5 minutes to prepare, and then 4 hours kept in the fridge. This serves (depending on how large each serving is) 5-10 people. This makes for a good chilled summer desert, mid-afternoon snack, or a great prank (they look a lot like fish-eggs).

Accio Ingredients!

Assemble materials!

4 cups of sweetened vanilla coconut milk (If you're unlucky enough not to have a Trader Joe's near you, any brand will do)

1/2 cup of honey (you can use agave, if you wish)

4 teaspoons of vanilla extract

1 cup of chia seeds

Large-ish bowl

(Not pictured) Whisk

Whisk Together Coconut Milk, Honey, and Vanilla

Pour in the milk first, then the honey and vanilla. Being a budding photographer, I couldn't help but snap shots of the fascinating designs the vanilla and the honey made on the milk. This is the Art of Cooking.

At first, your whisk will get clumped with honey. Despair not! Just keep whisking and the honey will eventually mix in.

Pour in the Cup of Chia Seeds and Whisk Them In.

Saran Wrap Bowl and Put It in Fridge for 4 Hours. Stir Halfway Through (once 2 Hrs Are Up).

After 4 hours, the chia seed pudding should thicken up to the right consistency. Stirring in between four hours keeps the chia seeds from clumping up.

Eat!
