Coconut Avocado Apple Cookies (Gluten Free and Vegan)

Ingredients:

1/2 cup coconut butter
1 small avocado
1 3/4 cup sugar
3/4 cup brown sugar
2 ripe bananas
2 tspn vanilla
2 1/4 cup coconut flour
1 tspn baking soda
1 tspn baking powder
1/2 tspn salt
1 chopped granny smith apple
Vegetable Oil

1.) First mix avocado, butter, and bananas.  Use beater to ensure bananas are properly blended with the coconut butter.  Then add sugar, and flour one step at a time.  Mix in between each addition.  Then add the rest of the ingredients except vegetable oil.  We realized after we should have sauteed the apple first but the apple should be your last addition.  It still came out good but we think the flavor would've been stronger if we had sauteed first.

Preheat oven to 350F

2.) Then take 2 cups of the mixed ingredients in another bowl and add 3 oz of vegetable oil

Mix together and then shape tiny cookies on your tray for the oven.  You should be able to make 30 bite sized cookies for each tray. It will make around 4 trays.

Cook for 15-25 mins in oven at 350F.  It depends on how brown you like them, we averaged around 20 mins but keep checking on them.  You want to make sure they aren't crumbly and most people said they liked them more brown.

Keep repeating step 2 until out of dough.
