Coconana Spring Rolls

Deceptively Delicious!

This quick, easy, elegant dessert can be whipped up in minutes!

Your family and friends will never guess that this Spring Roll is a dessert!

Toasted coconut envelopes a spring roll wrap that hides a cream cheese center and warm banana that tastes like its caramelized!

Ingredients

Filling:

250 g cream cheese, room temp.

3 tbsp. sugar or to taste

1 tsp each vanilla & cinnamon

zest of 1 lemon or orange

3 bananas

Blend cheese, sugar, zest and flavourings together with a hand mixer.

Peel bananas, cut crosswise, then cut each half lengthwise; making 12 pieces

Shell:

12 spring roll wraps; 6" x 6" size

Batter:

1/2 cup large flaked desiccated coconut

1 cup flour

1 lg egg

1/4 cup milk or dairy free milk (almond, rice, coconut etc)

2 tbsp. sugar or to taste

1/2 tsp baking powder

Blend all ingredients except coconut with the hand blender. Set aside

Frying:

1 " vegetable oil in a deep medium sized pot

Place 1 wrap on a clean surface

Place 1 dollop of filling in the center of the wrap

Top with 1 banana piece

Fold over sides, see picture

Fold over edge closest to you.

Continue to roll tucking in any folds of pastry.

Dip pkg in batter, roll into coconut

Fry in preheated oil until golden brown*

* if you do not have a thermometer to check the oil temp at 365F; drop a smidge of batter into the oil.

If it sizzles and rises quickly then the oil is ready.*

Serving Suggestion: jazz this up with chocolate or caramel sauce or a scoop of ice cream!
