Cobble Bread

My wife used to work in a bakery (a real one, not a superstore bakery), and this is her take on one of the bread they made there.  That bread used only bacon or cheese, but neither of us is the type to leave a recipe alone.

Ingredients

You will need:
2 loaves of raw dough bread
1 lb bacon
2-3 pickled jalapenos, sliced
1/2 cup grated cheese (cheddar or jack)
1 tsp ea garlic powder and dried onion
fresh cilantro, chopped

Begin by slicing open the dough loaves lengthwise and opening them like a pocket.

Evenly split the other ingredients and place into the open loaves.  Then close the loaves around the ingredients.

Take a bench (or bowl) scraper and chop the loaves left and right then knead them to distribute the ingredients.  Repeat once more.

Chop one last time and roll gently to create the "cobbles" and place into bread pans.

At this point, follow the rising and baking instructions for your bread dough.  After cooling and removing from the pan, slice and enjoy.

Wonderful straight out of the oven and buttered, but it also makes fabulous grilled cheese sandwiches.
