Cinnamon Sugar Pie Crust Cookies

Every once in a while I have leftover food in my refrigerator and I think to myself, how can I make leftovers taste yummy. This was the case with my extra pie crust. So I decided that cookies was the way to go and guess what, they turned out AMAZING! I would recommend putting them in the refrigerator after you pull them out the oven because they taste much better cooled! So if you ever have extra pie crust laying around that you aren't planning to use for pie, then cookies will be great. Ingredients

  • 1 Pie Crust (my homemade recipe)
  • 3 Tablespoons Sugar
  • 3 teaspoons ground Cinnamon

Roll It Out!

Begin by preheat oven to 350 degrees F. Line large baking sheet with parchment paper. While your oven preheats, on a floured surface, roll out pie crust to about a 13 in x 10 in rectangle (it doesn't have to be a perfect rectangle).

Combine Cinnamon and Sugar

Next in a small bowl add in sugar and cinnamon and mix until combined.

Spread and Roll

Sprinkle the combined sugar/cinnamon mixture evenly over the top of the rolled out pie crust. Then go ahead and roll the dough over itself. Starting with the short end, roll crust until you have a tightly rolled log.Slice into 1 in wide cookies and place on baking sheet that has been lined with parchment paper. Bake cookies for 13-15 minutes.

Bake

Bake cookies for 13-15 minutes.

Cool and Enjoy!

Allow the cookies to completely cool, I placed them on a rack to cool faster. I recommend allowing them to cool in the fridge overnight also (if you can resist) they taste much better.
