Cinnamon Roll Cake With a Twist

Are you one of those folks whose eyes glaze over when you see a recipe that has more than 5 ingredients? Well, that is how I feel when I look at a cinnamon roll recipe and cringe at how long it takes to make a dozen.

every thing about cinnamon rolls makes my mouth water, the aroma of cinnamon rolls, the icing and the dough. This homemade twist on cinnamon roll cake dessert can be made in under an hour and has all the flavor of a cinnamon roll but in an easy cake with vanilla icing drizzled on top!

For the Cake:

3 cups all-purpose flour

1 cup white sugar

2 large eggs

2 teaspoons clear vanilla extract

1 1/2 cups milk

1/2 cup (1 stick) salted butter, melted

For the Cinnamon Filling:

3/4 cup (1/2 sticks) salted butter, softened to room temperature

1 cup packed light brown sugar

2 tablespoons all-purpose flour

1 tablespoon ground cinnamon

For the Glaze:

2 cups powdered sugar

5 tablespoons milk

1 teaspoon clear vanilla extract

1 teaspoon cinnamon roll extract, optional

Servings: 12

Prep Time: 10 Minutes

Cook Time: 40 Minutes

Total Time: 50 Minutes

Supplies Needed:

Measuring cups and spoons

1 rubber spatula

1 spatula

1 mixing spoon

1 medium size wire whisk

3 mixing bowls: small, medium and large

1 9x13-inch glass baking dish with cover

Cooking spray

1 toothpick

2 pot holders

Add Dry Ingredients for Cake Batter

In a large mixing bowl, add ingredients for the cake in this order:

  • 3 cups flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 2 eggs
  • 2 teaspoons clear vanilla extract
  • 1 1/2 cups milk

Mix all ingredients together using wire whisk until cake batter is combined.

Melt butter in microwave safe dish for 15 seconds or until melted.

Slowly add the 1/2 cup melted butter to large bowl of ingredients.

Mix just until combined. (over mixing flour in baked goods can make it tough and rubbery.

Preheat the oven to 350 degrees Fahrenheit.

Add Cake Batter to Baking Dish

Spray dish lightly with can of cooking spray.

Pour cake batter and spread evenly using using spatula,

Add Ingredients for Filling

In a medium mixing bowl, add all of your filling ingredients in this order:

  • 3/4/cup softened butter
  • 1 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ground cinnamon

Stir with fork until combined well.

Add Filling to Baking Dish

Take a spoon and drop the cinnamon filling mixture by the spoonfuls onto the cake batter.

Take a butter knife or use the back of a spoon and make swirly, marble-effect patterns all around the cake.

Drag the knife through both the cinnamon and cake batter.

Bake the Cinnamon Roll Cake

Bake the cake for about 35 to 40 minutes at 350 degrees Fahrenheit or until a toothpick inserted into the center of the cake comes out clean.

When timer goes off, use potholders to remove cake from oven and allow to cool for 5 minutes.

Whisk together the following ingredients after adding in this order:

  • 2 cups powdered sugar
  • 5 tablespoons milk
  • 1 teaspoon clear vanilla extract
  • 1 teaspoon cinnamon roll extract, optional

Pour the glaze over the warm cake.

Add additional glaze when serving each piece of cinnamon roll cake.
