Cinnamon Pie

During the holidays, we like good food and various treats. We especially like pies and cookies. This year, I decided to try to make a new treat that we could have each year.

Last week on the TV show Psych, they featured a cinnamon pie throughout the episode. I ended up being really in the mood for something like that by the end of the episode, so I wanted to try my hand at making a cinnamon pie.

In this instructable, I shall share my cinnamon pie secrets with you.

While I made this recipe for the holidays, it is good for anytime during the year. And this pie turned out so good, I have given a few as holiday presents already.

(PS It turned out pretty good, I have to say :D )

Gathering the Necessities

Here are all of the ingredients youll need for this (This recipe is very simple, so youll just need stuff you can just find around the kitchen).

Crust
-  10 graham crackers
- 1/4 cup butter, melted
- 1/4 cup sugar

(NOTE:  I made this pie with a graham cracker crust, but I recommend using a regular pie crust. The crumbs just got absorbed into the pie, which made it kinda messy to get out o the pan. A regular crust is definitely the easier way to go.)

Filling
- 3/4 cup white sugar
- 1/4 cup loose brown sugar (by loose, I mean dont pack it)
-  1.5 tbsp flour
- 1 tsp cinnamon
- 1/4 tsp salt
- 2.5 tbsp melted butter
- 1.5 cups milk
- 1 beaten egg
- 1 tsp vanilla

Create the Crust

Ok, the crust is super easy.

First, crush the crackers. How fine you crush them is up to you. I like to use my food processor to get them into a fine powder.

Now just mix the cracker crumbs, sugar and butter together. Push it into a 10 inch pie pan. Make it as even as possible, and as high up the sides as you can.

That parts done. Now just set it aside until I tell you to use it again.

Mix the Filling

This part is very easy as well.

Mix together the flour, sugar, salt and cinnamon in a large mixing bowl. It does not have to be perfect, just mixed thoroughly. It should look like simple cinnamon sugar right now.

Now add the vanilla, butter and egg to the mix. Mix this part nice and evenly. At this point, it should have a very thick texture, like a cinnamon paste.

This is where you add the milk. After it is blended well, it should look like thin chocolate milk. However, it will not taste at all like so. I recommend not drinking it (although, this could be used as a good April Fools joke. Im making a mental note of that for next year).

Cooking It Through

Now is the time to use the prepared crust. Pour the filling into the crust, and put it in the preheated oven.

Bake it at 400°F (205°C) for 15 minutes. Reduce the temperature to 350°F (177°C) and bake for an additional 45 minutes.

Take the pie out of the oven right after the 45 minutes, no matter if its still jiggly or not. If its still jiggly. the remaining heat from the pan will continue to cook it as it cools.
