The fruit mince mixture doesn’t take too long at all to make, and it has such a deliciously sweet Christmas aroma! You make it a couple of hours in advance, but best if it sits in the fridge for a few days to let the flavours really infuse! Don’t forget to take the star anise pods out when you spread the mince on the dough, or someone might get a bit of a shock biting into one!

Fruit Mince

Mix all ingredients in a bowl. Let sit for at least a couple of hours, or a couple of days in the fridge to let all the flavours infuse together

Dough

Add the coconut oil to the warm milk and then the yeast and let sit for 10 minutes

Add the salt and sugar and three cups of flour gradually, kneading into a dough. Place in a bowl that you have lined with coconut oil. Let sit for an hour or two until doubled in size

Once the dough has risen, knead a few more times, sprinkle a bench with flour and roll the dough out into a rectangular shape

Spread the fruit mince on top of the dough evenly. Starting from a long edge, roll the dough into a cylindrical shape. Then cut into rounds a couple of inches long
