Christmas Cranberry Porridge

This morning, I invented this lovely Cranberry Christmas Porridge,…ooh yes! The flavors in this lovely breakfast feel so Christmas like, you know.
Gather Your Ingredients!

Recipe: For 2 portions
Ingredients:
1 cup fresh cranberries (120 gr)
1 cup gluten-free medium-sized oats (92 gr)/ my oats needed 15 minutes of cooking
1 cup unsweetened soy milk (250 ml)
1/4 cup vegan dark mini chocolate chips (45 gr)
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
to drizzle just before serving, a drizzle or 2 of pure maple syrup
Cook Until Oats & Cranberries Are Hot & Cooked Through!

Take fitted cook pot & add all ingredients in it. Stir with a spoon. Bring to the boil & cook until oats are cooked through & the berries have popped, a few of them at least. Stir often & prevent burning with the chocolate. Lower your heat if you need to. Taste. When your oats are ready, add a few drizzles of pure maple syrup, not too much! You want to taste the chocolate, spices & then now & then, a burst of sour cranberry! That is what I like! You can really taste the ginger & cinnamon too! :) Enjoy with a loved one & with Nat king Cole in the background! ;) Joy with the world! :)
