Christmas Cookie Hearts

Hello! :)

I am going to share with you my favorite Christmas cookie recipe. Crunchy and creamy - they have it all! These cookies are so easy to make and they taste delicious. I call them Christmas cookies because I always make them when it's the most wonderful time of the year but of course, you can make them any time You want. ;)

Those delicious cookies happen to be vegan as well! So vegan or not, everyone can have a bite! :)

All You Need

Base:

  • 600g flour
  • 4 tablespoon castor sugar/powdered sugar (basic sugar works as well)
  • 200ml vegetable oil (coconut oil or margarine works as well)
  • 100g coconut flakes

Topping:

  • 500g soja yogurt (any other plant-based yogurt works the same)
  • 2 tablespoon castor sugar/powdered sugar
  • 150g cashew nuts
  • 1/3 lime

Oven, blender, spoon, baking form and a big bowl are also required :)

The Base

Flour, oil, sugar and coconut flakes - mix everything together. Mix until the dough can be shaped into a ball.

Bake!

Now it is time to press gentle dough into the baking form. Be sure to create a little cup with your fingers so that topping could be added later.

Then it is time to put the cookie base into the oven. Bake them at 180 degrees for about 6 minutes until they look nice and crispy.

Topping

When the cookies are baking in the oven it is a good time to make the topping.

Sugar, lime, yogurt and nuts - blend everything together until it is nice and creamy.

Fill the Cookies

When the base is nice and crispy it is time to fill them with our pre-made rich and creamy yogurt topping. The easiest way is to use a spoon!

When the base is entirely cooled you can place them into a freezer and let them stay there for at least a few hours until the cookies are nice and solid. After this they are ready!

Decorate

If cookies are ready then feel free to decorate them as You want. I used tangerines, lime and muesli but of course there no rules for that!
