'Chole kulcha' also called as 'Matar Khulcha' is one of the most loved evening snacks in North India. It is a combination of spicy matar that is paired with soft and fluffy Kulcha. It comes under those chaat that can be prepared at home and is loved by everyone. It is a perfect accompaniment of the cool rainy weather. Chole Kulcha is very easy to make and can be served at any special occasions.

Ingredients Needed

Ingredients (4 Servings)

  • 1 cup white peas
  • 2 1/2 cups of water
  • 2 raw chopped tomatoes
  • 2 raw choppedonion
  • 1/4 teaspoon turmeric powder
  • 1/4 baking soda
  • 1/2 teaspoon chaat masala powder
  • 1/2 teaspoon dry mango powder
  • 1/2 teaspoon of black pepper
  • Salt to taste
  • 50 gm butter
  • 2 chopped green chilli
  • 1 tablespoon ginger
  • Handful of coriander
  • grated beetroot
  • Ready made kulcha base (12 pieces)

Prep-up the Things Required

Soak the white peas along with 1/4 tsp of baking soda in 2 cup of water overnight for about 7-8 hours.

Add the soaked peas to a pan along with turmeric powder and salt. Let it to boil on low simmer for 15 mins. Make sure the white peas have soften and its outer layer is still intact.

Prepare the Chole

Its now time to wear the chefs hat.

Take a pan add the butter and put it on flame. Now add the boiled white peas and salt to it. Stir them and add coarsely chopped onion, tomatoes, ginger and chilli's. To this now add the spices (mango powder, black pepper, chaat Masala and salt) and mix well.

After mixing the ingredients add coriander and grated beetroot to the pan , this will enhance the flavor and make it look appealing. Mix all the ingredients and after some time add about a half a cup of water in it.

Allow the ingredients to cook for 5 minutes. Then, turn off the flame and squeeze the lemon juice in it. Your Chole is now ready. Transfer the Chole to a serving bowl.

Toast the Kulchas

Kulchas are soft spongy bread like base which we can either get ready-made from a store or we can prepare at home using maida flour. Here , we are using the ready made one.

Toast kulchas on a hot tawa with some butter and some coriander on both sides until kulchas are golden in color.

We Are Done, It's Time to Serve.

Arrange the chole and kulchas in a plate with a lenom slice and raw green chilli . Now, and your chole kulche are ready to serve!
