Chocolate Self-saucing Pudding

This is a wonderfully chocolaty one-pot dessert that has been passed down the generations from my great-grandmother. it combines a lovely warm chocolate pudding with a caramel-ish chocolate sauce. it is easy, quick and incredibly satisfying!!!!

with a few spare minutes (plus cooking time) and some basic ingredients you too can enjoy this rich, gooey delight

the Ingredients are simple, basic ones that you probably already have lying around! if not, their almost certainly easily available

for the pudding
60g butter, melted
1/2 cup milk
1/2 cup white sugar (thats the bag only half in the picture!)
1 cup Self-Raising flour
1 tbsp cocoa powder
1 tsp vanilla essence

for the sauce (oops..no photo)
3/4 cup brown sugar
2 tbsp cocoa powder
2 cups boiling water

equipment
large oven proof dish (casserole dish, etc)
measuring cups
measuring spoons
wooden spoon or spatula

Make the Pudding

In your oven-proof dish, combine pudding ingredients previously listed (do not add "sauce" ingredients). mix  thoroughly until well combined. it will look like theres not nearly enough mixture in the bottom of the dish, but it will swell up a lot!

smooth over base of pan so that its fairly flat. from this point on you don't need to mix anymore so go ahead and throw your wooden spoon in the sink!

Make the Sauce

take your brown sugar and remaining cocoa powder and sprinkle over the top of your pudding layer, do not stir.
boil water and carefully measure and pour over the pudding mix.
once again, do not stir

Bake

Bake your pudding in a oven preheated to 160 degrees (Celsius) for 20-30 minutes. it will be cooked when the cake has swollen, formed a crust and the sauce has "disappeared"

Serve

when you spoon out this pudding, you will see the three layers- crispy cake top, gooey pudding inside and a rich chocolate sauce on the bottom

spoon into individual bowls, serve with cream or ice cream (or any other preferred topping) any enjoy!
