Chocolate S'mores Cupcakes

This is a very simple recipe for Smore's Cupcakes, anyone can make them since it is very easy. You don't need any special equipment for this recipe, just a hand mixer will do. This recipe makes some delicious cupcakes and is also fun to make, especially when you are really bored and really just want a snack to eat while watching movies or binging tv shows. I hope you enjoy the recipe!

Supplies

For the chocolate cupcakes:

4 tablespoons unsalted butter

1/4 cup vegetable oil or sunflower oil

1/2 cup water

1 cup all-purpose flour

1 cup granulated sugar

6 tablespoons unsweetened cocoa powder (you can also use chocolate Nesquik powder)

3/4 teaspoon baking soda

1/8 teaspoon salt

1 large egg

1/4 cup buttermilk

1 teaspoon vanilla extract

For the chocolate buttercream frosting:

1/2 cup semi-sweet chocolate chips

1/2 cup or 1 stick softened unsalted butter

1 cups powdered sugar

1 teaspoon vanilla extract

Extras:

Teddy Grahams (any flavor, I used chocolate chip)

Jet-Puffed marshmallows

Hershey's chocolate bar

Supplies:

A hand mixer

Oven

Baking tray (with baking paper)

Cupcake tin

Cupcake liners

Bowls

Microwave or stove

Spatula

Whisk

Piping bag

Making the Chocolate Cupcake Batter

Since I don't want you to forget, Preheat the oven to 350⁰F (≈176⁰C) before you start making the batter.

To start making the batter you need to mix the butter, oil, and water in a microwavable bowl. Once you have stirred the ingredients, place the bowl in the microwave for 10 seconds, take it out, and stir it. Keep putting it inside the microwave for 10-second intervals until the butter is melted. Set aside the bowl with the butter mixture and get a larger bowl.

In the new bowl place the flour, sugar, cocoa powder (you can also use chocolate Nesquik powder), baking soda, and salt. Stir the mixture until it is all incorporated. Add the butter mixture into the dry ingredients and mix with the hand mixer on medium speed (mix in 30-second intervals, scrape down the sides with a spatula in each one, this applies for every time you are mixing something). Once the mixture all incorporated, add the egg and mix it on medium speed again. Once the egg is incorporated into the mixture, add the buttermilk and vanilla extract. Mix the batter for the final time until everything is incorporated and you are left with a smooth batter.

Note: Everything in this whole recipe is for a dozen cupcakes (including the buttercream and decorations), so adjust the recipe according to how much cupcakes you want.

Baking the Chocolate Cupcakes

Once you have all the batter ready, line your cupcake pan with your cupcake liners. Pour your batter into your lined cupcake tin until each space is filled up to 3/4 of the total area. Place your cupcake tin into the oven (make sure your oven rack is placed around the middle of the oven) and bake the cupcakes for 25 minutes. Poke your cupcakes with a toothpick, if it comes out clean, your cupcakes are ready (if it doesn't leave it in the oven for another few minutes). Take your cupcakes out of the oven and place them somewhere where they can cool down.

You can turn off your oven, but we are going to use them with the marshmallows in a while, so it's not going to make much of a difference.

Melting the Marshmallows

Take a baking tray and line it with baking or parchment paper. Place 12 marshmallows on the tray and then place them in the oven for around 5 minutes at 350⁰F (≈176⁰C). Take the marshmallows out of the oven (or leave them for a couple more minutes if you want them more roasted) and leave them somewhere where they can cool down.

You could leave the marshmallows to cool down, or you could make this step after applying the buttercream to the cupcakes so that your marshmallow is gooier inside when you decorate and eat it.

Making the Chocolate Buttercream Frosting

To make the buttercream you need to melt your chocolate chips first, there are two ways to do this. You could microwave your chocolate chips inside the microwave (at 10 or 15second intervals, stirring the chocolate in between each one), or you could use a water bath. To use a water bath you take a pot and put hot water in it, and take a glass bowl (needs to be big enough that. it doesn't fit inside the pot) and place it on top of the pot, then you add your chocolate to the bowl and stir it until it melts. Once your chocolate is melted set it aside.

Grab a new bowl and beat the butter until it becomes light and creamy, add the powdered sugar and mix again. Keep mixing and scraping down the sides until your mixture is smooth and creamy. Add the chocolate (make sure it's cooled) and the vanilla extract to the mixture, and then mix it again until everything is mixed.

Once your buttercream is ready, put it inside a piping bag so that you can use it on the cupcakes.

Decorating the Chocolate Cupcakes

Once you have everything ready (except the marshmallows if you want them gooier), take your filled piping bag and cut a hole with about just over a half-inch of diameter. Pipe the buttercream on the cupcakes as shown on the picture. Take your marshmallows off of the baking tray with a spatula and place it over the frosted cupcakes. Take your Hershey's chocolate bar and split it into 12 using the lines on it. Place the Hershey's piece in the marshmallow along with one Teddy Graham piece.
