Chocolate Sandwich Cookies With Vanilla Buttercream Filling

Delicious fudge sandwich cookies filled with a delicate vanilla buttercream frosting, topped with a light drizzle of white chocolate, and tart cherry jam

  • spatula
  • measuring cups
  • parchment paper
  • oven
  • freezer


ingredients:

Cookies

  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 1/2 cup butter, softened
  • 2/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 3/4 cup chocolate chips

Frosting

  • 1 cup softened butter
  • 2 cups confectioners sugar (powdered sugar)
  • 1 teaspoon vanilla extract



Prepare Wet Ingredients

In a large bowl combine softened butter, and both sugars, after they are well combined, add the egg baking powder and soda, salt, and vanilla extract. mix until well combined.

using a double boiler melt 3/4 cup of chocolate chips and add it to the wet ingredients and mix well

Your wet ingredients are ready


Prepare Dry Ingredients

In a separate large bowl combine your cocoa powder and flour mix well with a whisk or fork to get rid of any lumps

Combining Dry and Wet Ingredients

using a hand mixer slowly add your dry ingredients to your wet ingredients mix until well combined

Setting the Dough

Take some plastic wrap and lay it down on a flat surface

now take your cookie dough and place it on the cling wrap

take another piece of plastic wrap and place it over the cookie dough

flatten the dough out to about 1/2 an inch and place in the freezer for about 10 minutes


Baking

While your cookie dough is in your freezer preheat your oven to 350°F


once the dough is ready to be taken out of the freezer, Take a scoop and measure little balls of dough and lay it on a baking tray lined with parchment paper.

once this is completed place in the oven for 5 mins on the top rack of your oven, and 5 mins on the bottom rack (10 mins in total)

Butter Cream

While your cookies are in the oven start making the butter cream.


in a medium or large bowl add your softened butter and wip until light and fluffy, now slowly add your confectioners sugar, until well combined, now add your vanilla extract, and using a spatula mixture it in to the frosting,

Assemble

Take 1 cookie and pipe some butter cream on to it, starting at the edges and working your way to the center of the cookie . If you don’t have piping bags you can use a spoon. Now place another cookie on top, and you are done!

if you want to have a little extra fun you can add some color to your frosting, and/or you can decorate them. I drizzled mine with some melted white chocolate!
