Chocolate Peanut Sourdough Cookies
These sourdough-based cookies are a lovely alternative to traditional cookies. They're a good option for children as they are not loaded with additional sugar, plus they have a nice chew factor.
Let's take a look at how they were made.
Ingredients
To make the dough you will need:
- 300 grams flour
- 80 grams Sourdough Starter
- 3/4 C fruit juice concentrate
- 3/4 C peanut butter
- 2 tbsp cocoa
- Cold water to mix
-
1/2 C prune butter (See Step 5 of our LOL Biscuit Bun)
Sieve the flour and cocoa then mix with sourdough starter, fruit juice concentrate and peanut butter.
Warning: This May Get Messy!
Mix together thoroughly, adding water sparingly to make a soft non-sticky dough. Leave this overnight for the sourdough to work through the batch.
Prune Butter Is Added
Place the dough into a mixing bowl, add the prune butter and mix together.
Cookies Take Shape
Take a measured amount of mixture and roll into a ball, placing on a baking tray.
Press in the Little Train-tracks
Use a fork to flatten each cookie then bake for 30-35 minutes at 180C (360F) or until they spring back from the touch.
The children in your house will love these served with milk...preferably in a screw top jar which for some reason our kids love.
I hope you enjoy these cookies!
