In this Instructable, I will show you how to make chocolate peanut clusters at home. This easy homemade peanut clusters recipe is fantastic for the holidays, or anytime you need a super quick and simple treat to make. Start to finish they are done in under 30 minutes. All you need is chocolate and peanuts, or of course, you can use cashews, almonds, pecans, or walnuts. If you like chocolate and you like nuts, you have got to make these! Ingredients and Tools

Ingredients:

  • 1 cup chocolate (chocolate chips, chocolate bars, candy melts, candy coating, etc.) (170g) the amount doesn't have to be exact
  • 3/4 cup of peanuts (or cashews, almonds, pecans, or walnuts) (190g) the amount doesn't have to be exact

Tools:

  • Microwave safe bowl
  • Spoon
  • Sheet pan
  • Parchment paper or a silicone baking mat
  • Piping bag or a plastic bag, if you want to drizzle on white chocolate
  • Optional - Muffin pan with paper cups

Melt the Chocolate

Begin by melting the chocolate in a microwave-safe bowl in the microwave. Use the high setting for 30 seconds, then stir the chocolate with a spoon. Then 30 more seconds, and then stir, 20 seconds, and stir, until all melted.

Or you can use the double boiler method. Take a pot and put it on the stovetop. Add about an inch deep of water and set the heat to medium. Place a metal bowl on top of that and the chocolate in the bowl, and as the steam rises from the water it will gently warm the bowl and melt the chocolate.

You can use all of one kind of chocolate or mix and match. For example, I like to use milk chocolate chips and some dark chocolate chips. Candy melts are great for making different colors like you could do green and red ones for Christmas. So many options!

Mix in the Nuts

Now just add the peanuts to the bowl of melted chocolate and stir until well coated. You can use only peanuts or a combination of nuts. Don't like peanuts? Use pecans, walnuts, or cashews!

Create the Mounds of Chocolate

Take a spoonful of the chocolate and peanuts and drop it onto a sheet pan or cookie sheet lined with parchment paper or a silicone baking mat. You should be able to get about 12 of them depending on the size you make them.

Another option would be to use a muffin pan with paper cups. This is great if you want to give them as gifts.

Place the pan in the fridge and allow the chocolate to set.

NOTE: If you don't temper the chocolate, these will get soft at room temperature unless your home is cooler. But you can just store them in the fridge. If you want to be able to leave them out at room temperature most of the day, then I recommend tempering the chocolate or use candy melts/wafers instead, which don't need to be tempered.

Drizzle and Serve!

Once they come out of the fridge, you can drizzle the tops with melted white chocolate or white candy melts if you like. Just put the melted chocolate in a piping bag or a sandwich bag with the corner snipped off.
