Blend Those Oats

First preheat the oven to 350 F (176C). Next add your oats to a food processor or blender and blend the oats until they become almost like a flour. It only takes like 20 seconds or so.

Remaining Dry Ingredients

Now let's add our unsweetened cocoa powder, baking powder, and baking soda to the food processor and mix those in. Place the dry ingredients mixture in a large bowl and set aside.

Let's Go Bananas!

Now place your ripe bananas in the food processor and add in the honey and vanilla extract. Turn the food processor on and mix until combined. Again, it only takes 10 to 20 seconds.

*Note let your bananas ripen until the peel is pretty dark, then place the whole thing in the freezer for later use. :) Don't be throwing away those dark bananas! They are great for granola bars and banana bread/muffins.

Mix Mix Mix

Now add your banana mixture to your oats mixture as well as your chocolate chips and combine them all with a spatula or wooden spoon.

Fill and Bake

Now we fill up our cool granola bar pan or use like a brownie pan with parchment paper. Then bake it on the middle rack of the oven at 350 F (176 C) for 14 to 18 minutes until when you poke it with a toothpick it comes out clean. Once baked let them cool completely. If you try and cut into them or take them out of the pan at this stage they are liable to fall apart.

Remove and Finish Them Off

Next we remove them from whatever pan we used, if you used a normal baking pan, now you can slice them up however you like. Next drizzle some white chocolate if you like on top. I like to do this, because it makes them look a bit more fancy, haha. :) And I like the contrast between the dark and light. Enjoy! :)
