Chocolate Dipped Peanut Butter and Marshmallow Cookies
Each year during the holidays, my family enjoys making lots of different cookies and candy treats. Everyone enjoys helping out mixing ingredients, watching through the oven window, or just hanging around for samples. This instructable describes how to make my absolute favorite cookie during the holidays. The best part is that it is also one of the easiest to make. With simple ingredients and simple steps, the whole family can help out and the reward is one of the most delicious cookies I know of (assuming you like chocolate and peanut butter).
Gather Ingredients
Ingredients:
• 1 box of round butter crackers
• 1 jar of creamy peanut butter
• 1 jar of marshmallow creme
• 1 package of chocolate bark
Keep in mind that you can adjust these ingredients to your liking. I used whole wheat crackers, for example. You can use other types of chocolate for dipping, but I like the convenience and flavor of chocolate bark. Feel free to experiment with your own cookies.
Other materials:
• wax paper
• cooling rack
• microwave-safe bowl
• spoon and tongs and/or food prep gloves
Add Peanut Butter
Let's start by applying peanut butter to one side of a cracker. The biggest tip to remember about this step is to apply a thin layer. If you love peanut butter like I do, you will be tempted to spread a nice thick layer, but do not give in! Later when you assemble the cookies and try to dip them in the melted chocolate, you will end up with a slippery mess. After you spread a few, you will find a technique that works quickly for you. I tend to mound mine slightly in the center because: 1) it allows room for spreading later and 2) I really like peanut butter.
Add Marshmallow Creme
Assemble Cookies
Now you should have a a set of crackers with peanut butter and a set coated with marshmallow creme. Just match them up and sandwich them together. You can give them a slight squeeze to seat them firmly together. If you have several helpers with you, then you can very easily set up the peanut butter, marshmallow, and this sandwich step as a sort of assembly line. It lets everyone get in on the fun and moves things along quickly.
Coat Cookies With Chocolate
With all of your cookies assembled, it's time to coat them with chocolate. You can melt your chocolate in the microwave, just be careful not to burn it. I only melt it in small batches to make it easier. Before dipping, set up your cooling rack over a sheet of wax paper to catch any drips. You can use tongs or food prep gloves to dip your cookies into the chocolate. You may find it handy to use a spoon to scoop additional chocolate over the cookie to ensure full coverage. Once your cookie is covered, place it gently on the cooling rack to allow the chocolate to harden. After cooling, you can press gently beneath each cookie on the cooling rack to release it. Place them in a container for later or just eat them all right away...it's up to you!
