Chocolate Dipped Apricots

This is a super simple how-to for making dried apricot candy. It's cheap and delicious. Throw these in a big mason jar with a ribbon, and this is your DIY moment!

Ingredients

There are just two!

25 - 30 dried apricots
6 oz (or so) good quality, semi-sweet chocolate chips 

Optional:
1/2 cup toasted chopped walnuts or pecans (if you have them!)

Melt That Chocolate

Melt the chocolate in the microwave for about 2 minutes, or using a double boiler. Stir until smooth. Yummmm

Prepare Your Surface

Place a sheet of wax paper over a large cutting board or baking sheet

Dip about half of each apricot in the melted chocolate and place on the wax paper. If you have nuts, roll the dipped apricot in the finely chopped nuts before resting it on the wax paper. Be generous with the chocolate =)

If you have leftover chocolate, search your pantry for other items to make candy with - I used almonds and dried cranberries

Place the chocolate covered apricots in the fridge for at least an hour before serving. This will help the chocolate set.
