Chocolate Cups With Strawberry Filling
These cute mini desserts are an absolute hit in parties. Both the shells and frosting can be made way in advance and if you would like to save further time, you can assemble them and keep in the refrigerator.
Ingredients: (makes 6-7)
Dark chocolate – 70g
Unsalted butter – 100g
Icing sugar – 180g
Strawberry puree – 2 Table spoons
Food coloring – 2 drops (optional)
Step 1: Melt Chocolate
Melt some dark chocolate. I prefer doing it in a heat proof bowl over simmering water. You may do that in a microwave in 30 seconds intervals. I get better results by doing it on stove as I can be full in charge.
Step 2: First Coating
Take some moulds to shape the cups. I have used mini silicon cupcake moulds but foil lined cupcake liners will be perfect for doing the job and is so much easier as well. Put couple of tea spoons of chocolate inside each mould and rotate the moulds so that chocolate reaches all the corners. Make sure there’s enough chocolate at the bottom as that’s going to hold the shape. Put the moulds in the freezer for 15 minutes to chills.
Step 3: Second Coating
After 15 minutes, take the moulds out and apply another layer of coating. This time put 1 tea spoon of chocolate and repeat the rotating process. I find a brush is very helpful for applying chocolate for the second coating as the cups are chilled and the new batch of chocolate sets very quickly. After applying the layer, put the cups back in the freezer for another 10 minutes to chill.
Step 4: Make the Filling
In the meantime, let’s prepare the filling. In a bowl, take unsalted butter, make sure it’s at room temperature. Beat it until fluffy. Add sugar and beat it until creamy and mixed all together. Now it’s time to add strawberry puree. Beat for another minute or so. I added 2 drops of pink food colouring which is completely optional. You may use it to get desired colour if the puree is not bright enough.
Step 5: Unmold
Take the cups out from the freezer and very carefully unmold them. They break very easily and the warmth of hands melts them in seconds, so be very careful.
Step 6: Fill
After unmolding all the cups, put them in a dish and then fill up with the frosting. I pipe the frosting to get a gorgeous look. And you are done. Hope you enjoy making them as I do and obviously there’s no need to stick to the filling I used here.
