Chocolate Crepes

Crepes are an amazing meal that can be served sweet or savory at any time of day, for any meal. Whenever I have friends or family over for breakfast, I always make a huge batch of crepes for everyone to enjoy. Crepes have always been a special thing for me, but making the same recipe over and over again, even with a huge range of toppings. got a little bit...boring. So I decided to spice it up a bit and manipulate the flavor. I now introduce chocolate crepes! Who doesn't want more chocolate in their food?

If you're familiar with making crepes already, then most of the steps are pretty similar, apart from the ingredients. If not, this instructable still covers all the basic steps, so don't worry!

Ingredients

You'll need the following to make these crepes. This should make about 8-10 crepes depending on their size:

  • 1 cup flour
  • 1/4 unsweetened cocoa powder
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 cup milk
  • 1 1/4 cup cold water
  • 3 tbsp melted butter
  • Any crepe toppings you desire

Mix Dry Ingredients

You'll need to mix up all the dry ingredients in a mixing bowl first, that's the following:

  • 1 cup flour
  • 1/4 unsweetened cocoa powder
  • 1/3 cup sugar
  • 1/2 teaspoon salt

Mix Wet Ingredients

Next, mix all the wet ingredients into the dry ones, as follows:

  • 4 eggs
  • 1 cup milk
  • 1 1/4 cup cold water
  • 3 tbsp melted butter

Mix Until Smooth

After all the ingredients are mixed in, use an eggbeater or a blender to mix up the batter until it has a nice, smooth consistency. There shouldn't be any lumps of flour, cocoa powder, or sugar after you've mixed it! If it feels a bit to thick, you can add a bit more water.

Prepare the Pan

If you have a non-stick pan, then you don't need to worry about this step. If you don't, then grease the pan with some oil or butter so your crepes don't stick to it! Once you've greased the pan, put it on a medium heat on your stovetop. Shallower pans are best for crepes because it's easier to get underneath the crepe with a spatula to flip it.

Pouring the Batter

Using a 1/4 measuring cup, scoop up some batter and pour it around the pan. The crepe should be thin, so try to cover a lot of area! Usually I pour some batter on, and then pick the pan up and tilt it around to spread the batter evenly. This is just like making normal crepes!

Cooking and Flipping

If you are familiar with cooking normal crepes, this step is essentially the same, apart from the fact that because the batter is brown, it's harder to tell when it is done, so you need to pay close attention. Once the crepe has mostly solidified and is a slightly darker brown (usually after about a minute), it's time to flip it! Slide a spatula underneath the crepe and flip it over. After the flip, let the crepe cook for 30 seconds or so, until the edges are slightly crispy. Repeat until you run out of batter!

Toppings

To even further add to the flavor of your crepe, add some toppings! There's a huge range of toppings you can add to any form of crepe, from sweet to savory. However, because these crepes are chocolate, I would suggest staying on the sweeter side of things, although feel free to experiment! Popular crepe toppings that I think would go well with chocolate crepes include:

  • nut spreads (nutella, peanut butter, etc)
  • jam
  • fruits
  • berries
  • yogurt
  • cheese
  • lemon juice
  • powdered sugar

Rolling the Crepe

I always like rolling my crepes up to keep all the toppings intact. To keep their shape, I usually put down some sort of nut spread, like peanut butter or nutella, as my base layer, and then fill the center with fruit and berries. The spread will hold the crepe's shape nicely as you roll it up.
