Chocolate Chocolate Chip Cookies

Chocolate chocolate chip cookies a sugary sweet treat with a twist of childhood nostalgia.

I have never really been a fan of chocolate chip cookies due to how sweet they were, and I got curious to see if I could substitute regular chocolate with hot chocolate from my childhood (Abuelita hot chocolate )

I started looking into regular recipes and didn't really see any similar ones besides one, but I chose to use my own chocolate chip recipe and hot cocoa powder in it, and just experimented from there because what could go wrong:D

Ingredients:

  1. 2 large Eggs room temperature
  2. 1 Cup of unsalted Butter room temperature
  3. 3/4 Cup of brown sugar
  4. 1/4 cup of granulated sugar
  5. 1/4 Unsweetened cocoa powder
  6. 1/4 cup of Mexican abuelita Chocalate
  7. 1/2 teaspoon of cornstarch
  8. 1 teaspoon of baking powder
  9. 1 teaspoon of baking soda
  10. 2 Cups of all-purpose flour
  11. 1 or 2 cups of semi-sweet chocolate chips (add as much as your heart desires)



Tools:

  1. Hand or Stand Mixer
  2. Ice Cream Scoop
  3. Baking Sheet Tray x2
  4. parchment paper
  5. Measuring Cups
  6. Measuring Spoons

To start, in a bowl or your stand mixer, crack two large room-temperature eggs along with one cup of butter, then add in your 1/4 cup of brown sugar,1/4 cup of regular granulated sugar, 1teaspoon of vanilla extract, and mix until all is combined and of a thick creamy consistency

Once all of your wet ingredients are combined, we will begin with the dry ingredients with 1/4 cup of unsweetened cocoa powder,1/4 cup of abuelita Mexican hot chocolate powder, 1/2 teaspoon of corn starch, 1teaspoon of baking soda, and 1 teaspoon of baking powder. Then, we will mix it all until creamy. Once we have all that mixed, we will add 2 cups of all-purpose flour and then mix. If the dry ingredients are stuck on the side, we can use a silicone spatula to scrape the sides and then continue mixing until all is well combined into a cookie dough consistency. Lastly, for this step, we will add around 1-2 cups of semi-sweet chocolate chips or as much as your heart desires if you have an extra sweet tooth, and combine it into the cookie dough.

Let It Set and Prep the Trays

Now that we have finished the important parts, we will let the cookie dough sit in the fridge or a cold space for about 30 minutes. As the cookie dough is resting, we can prepare the baking sheets to place the cookie dough once it's ready. We will need two baking sheets, or if you have one large enough to fit all the cookies, you can use that one and line it with parchment paper. After that, we can preheat the oven to 350

Bake

Since the cookie dough is nice and rested, we will begin to place them on the baking sheet with an ice cream scoop for even portions and place them into the oven once hot and ready, and bake for 9-10 minutes

Once baked let them chill until they are warm or cool and enjoy will a milk or a nice glass of mexican hot choclate to acomidate with the cookies :)
