Chocolate Chip Sourdough Cookies

We've got some very nice cookies to share. Using a sourdough base, these cookies not only taste great for are good for you! Plus they have no added sugar.

Ingredients

To make dough you will need:

  • 300 grams flour
  • 80 grams Sourdough Starter
  • 1/2 C fruit juice concentrate
  • 1 Tbsp water
  • 1 tbsp vanilla
  • 1/3 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1/4 C chocolate chips

Prune butter

  • 60 grams butter
  • 60 grams prunes blended
  • 1/6 C (70 mls) boiling water

Adding Together

In a bowl add the flour, starter, vanilla and fruit concentrate. You can also add the water at this stage (though it is shown in the next step).

Mixing It All Up

Mix it together until it forms a ball then cover with a tea towel and leave to sit overnight.

More Ingredients for the Filling

You will need:

  • 1/3 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1/4 C chocolate chips

Prune butter

  • 60 grams butter
  • 60 grams (2.2 oz) prunes
  • 1/6 C boiling water

Make the Prune Butter

In a food processor or blender blend the hot water and prunes together and then blend in the butter. Once the prune butter is made add the chocolate chips and baking soda and give it a good mix.

Bring It All Together

Tip out the dough on to a lightly floured bench then stretch it until there is enough room to add the filling.

Now add the apple cider vinegar to the filling and gave it a good and quick mix, then fold the dough over it.

Fold the mixture into the dough as shown.

You could try hand kneeding the mixture but we found better success by using our caker mixer.

Shaping Into Balls

Dampen your hands with a little water to stop the mixture sticking, then take some mixture and roll it between your palms to make a ball.

Baking and Eating

Bake in a 180 degrees C (356 F) oven for 40 minutes. Once they are nicely cooked remove them from the oven and leave them to cool for 10-15 minutes and then they are ready to be enjoyed.

Great with a hot drink, or serve as a dessert with a side of vanilla ice cream.
