Chocolate Chip Mini Muffins

These soft and pillowy Mini Muffins are studded with semi sweet chocolate chips and lightly dusted with powdered sugar. Their sweet smell will fill your kitchen and the they go from the bowl, to the oven, to your mouth in under 30 minutes!

Ingredients

This recipe makes 36 Mini Muffins or 12 normal Muffins. You will need ....

-2 cups flour
-1/2 cup granulated sugar
-scant 1/2 teaspoon salt
-1 Tablespoon baking powder
-1/4 teaspoon baking powder
-1 egg
-1/2 cup unsalted butter
-1 teaspoon vanilla extract
-1 cup milk
-1 cup mini semi sweet chocolate chips
-optional 2 Tablespoons powdered sugar for garnish

Dry Ingrdeints

Preheat oven to 375 degrees Fahrenheit.
Whisk together flour, sugar, salt, baking powder, and cinnamon in a small bowl until throughly combined.

Wet Ingredients

Melt the butter completely in the microwave. Let it cool for 5 minutes. Pour into a large bowl and add the egg to the bowl. Whisk vigourously for 1.5 minutes, until thick and bright yellow in color.

Make Batter

Whisk milk and vanilla into the butter and eggs. Then, in three parts, slowly stir the dry ingredients into the wet ingredients just until combined. Do not overmix and small chunks are okay. Scrape down the sides of the bowl with a spatul as you go. The batter will be thick.

Add Chocolate

Using a rubber spatula, fold the chocolate chips into the batter until evenly dispersed.

Scoop Batter

Spray mini muffin tin well with nonstick canola oil spray. This prevents the Muffins from sticking. Then add a heaping Tablespoon of batterninto each cavity. This makes 36 Mini Muffins so you will need two pans or you need to make two batches.

Bake

Bake in 375 degrees Fahrenheit oven and bake for 10 minutes. You will know they are done if you stick a toothpick in the middle and it comes out dry and clean.

Cool and Serve

Remove from oven and cool for 5 minutes. Then remove the Muffins from the pan and optionally sprinkle with powdered sugar. Enjoy these easy treats!
