Chocolate Chip Date Cake

This is a very yummy date cake.

Ingredients

This recipe makes a 9x9" or 8x8" cake.

Ingredients for cake:

1 1/4 cup boiling water(Not shown)

1 cup chopped dates (Note: You can use dried or fresh dates.)

1 teaspoon baking soda

1 3/4 cups all-purpose flour

1/2 cup white sugar

1/2 cup brown sugar

2/3 cup vegetable oil

1 teaspoon baking soda (Again)

1 teaspoon vanilla

1/2 teaspoon salt

2 eggs

Ingredients for topping:

1/4 cup flour

1/4 cup brown sugar

1 tablespoon butter

1/2 cup semisweet chocolate chips


Chop Dates

Remove the pits from the dates if they have them and save them.(See next step.)

Then chop the dates into small pieces.

I found that chopping the dates one by one worked better than chopping them all together.

One cup equals about fifteen dates.

Grow a Date Palm

Take the pits and soak them in water for seven days.

Put them in a plastic bag with wet paper towels seal the bag.

Wait until the dates sprout.

Plant the sprouted dates in a pot of soil and water regularly.

Then you will have a date palm.

Soak Dates

Put one teaspoon of baking soda in a large bowl with the chopped dates and add the boiling water.

Soak for fifteen minutes.

Make Topping

While the dates are soaking make the topping.

Melt the butter in a small bowl and mix in the brown sugar, flour, and chocolate chips.

I didn't have any chocolate chips so I used unsweetened baking chocolate it worked just fine.

Make Cake Batter

Add the rest of the ingredients to the dates and water with baking soda in it. The eggs, flour, white sugar, brown sugar, the other teaspoon baking soda, salt, vanilla, and oil.

Mix them all together.

Pour the batter into an ungreased 8x8" or 9x9" pan.

Bake Cake

Sprinkle the topping on the cake.

Then bake the cake at 350°Fahrenheit for 45-55 minutes.

First start with 45 minutes.

Then check if a toothpick stuck in the middle comes out clean.(Make sure you aren't putting it through a chocolate chip.)

Put the cake back in the oven for five minutes increments checking with a toothpick after each five minutes till the toothpick comes out clean.
