Chocolate Chip Cheesecake Pie

This is the perfect combonation of pie and cheesecake. The combonation of cheesecake and a homemade crust create an excellent that everyone will love. Now, let's get started!!!

Ingerdiants

For this concoction you will need:

Crust:
9 oz. vanilla wafer cookies
6 tbs. Butter

Cheesecake filling:
1/2 cup semi-sweet chocolate chips
2 14 oz cans condensed milk
1 lb cream cheese
1/3 cup lemon juice
1 1/2 tsp vanilla
1/2 cup sugar

Chocolate topping:
1 cup chocolate chips (finish 12oz bag from filling)
1/2 cup heavy whipping cream
White chocolate(optional)

Yield: 2 pies

Making the Crust

The first step to making this pie is the crust. Preheat the oven to 350o F. Place the vanilla wafers in a large plastic bag. Use a rolling pin to smash the cookies, make small crumbs if you want to have a crust around the whole pie, or leave them larger if you want a crunchy bottom. Soften the butter and add both the butter and the cookie crumbs into a large bowl. Mix the butter and cookie crumbs using two knives or your hands until they start to stick together. Evenly distribute the cookie crumb crust between the two pie pans and press down on them. Place in oven for about 10 minutes.

Making the Cheesecake Filling

The next step is the most important.

Add all of the filling ingrediants except the chocolate chips into a large bowl and mix until creamy, then add the chocolate chips. Pour half of the batter over each crust and use a spatchula to spread it out. Lastly, place both pies into the refriderator for 45 minutes.

The Topping

The last main part of this pie is the topping. Put the remaining chocolate chips(1 cup) and the heavy whipping cream in a small sauce pan. place on low (really low)  heat and stir constantly until the chocolate chips are melted. Remove from burner and continue stirring until it becomes a dark brown. Pour over both pies and spread out evenly. Put the pies back in the refriderator for 2 1/2 hours.

Pi on Top

The very last step of this pie is the Pi symbol on top. This is optional but I definately reccomend it.

First, print two Pi symbols and lay a piece of waxed paper over the top of them. Melt the white chocolate in the microwave until it is smooth and runny. Have a few toothpicks ready to smooth the chocolate out and carefully pour it over the prints. Use your toothpicks to smooth the chocolate out and to remove any excess chocolate that you don't want. Let it dry slightly and use a clean toothpick to perfect the edges of the chocolate. Let this dry comepletely. With a spatula, carefully lift the dried Pi and place it in the center of the pie. You may serve it now or put it back in the refridgerator to become more firm.
