Chocolate Caramel Cockroach Cookie
One night, I lay in bed trying to think of a new type of cookie to make. Unable to sleep, I turned on the light and suddenly I had my inspiration! These gooey-filled cookies are very tasty and perfect for kids’ birthday parties, for Halloween, or any time you want to have a little fun.
Chocolate Caramel Cockroach Cookies
1 cup sugar
1/2 cup softened butter
1/2 cup cocoa
2 eggs
1 tsp. vanilla
2 tsp. baking powder
2 cups flour
Preheat oven to 375 degrees.
Using a mixer, blend the first three ingredients together. Add eggs and vanilla. Mix in baking powder and flour until the dough is well-blended. Put the dough in the refrigerator for one hour or in the freezer for twenty minutes, until thoroughly chilled.
Other ingredients:
granulated sugar (to roll cookie in)
Rolo candies (2 for each cookie)
Chocolate Twizzlers Twists (cut into thin strips for legs and antennae)
M & M Minis Chocolate Candies (eyes)
Wilton Black Sparkle Gel (for pupils of eyes and mouth)

Take a generous tablespoon of dough and wrap it around one unwrapped Rolo candy.
Shape the dough into an oval. Using your index finger, make a depression on one end of the cookie.
Roll the oval of cookie dough in white granulated sugar until it's completely covered.
Line a cookie sheet with parchment paper and place each cookie approximately two inches apart.
Bake cookies for 8 to 10 minutes. Makes approximately two dozen cockroach cookies.

After cookies are baked, place a Rolo candy in the depression you made earlier.
Using a pair of kitchen scissors, cut Twizzler twists into thin strips. Insert strips into the sides of the cookie to resemble legs.
For the eyes, place two small M&Ms into the softened Rollo candy.
For the antennae, insert two short pieces of Twizzler twists over the eyes.
Using the black gel, make a dot on each eye to resemble the pupil.
Using the black gel, pipe a mouth on the cookie.
Now the Chocolate Caramel Cockroach Cookie is ready for munching. Enjoy!
