Chipwich | Chocolate Chip Cookie Ice Cream Sandwich
In this Instructable, I will show you how to make a Chipwich. A Chipwich is a chocolate chip cookie ice cream sandwich. This recipe is so very easy to make, and you can switch out the chocolate chip cookies with, snickerdoodles, sugar cookies, chocolate cookies, gingersnaps, macadamia nut cookies, etc. If you love cookies and you love ice cream then you will love these yummy homemade ice cream sandwiches. Ingredients and Tools
Ingredients:
- 24 chocolate chip cookies
- 12 scoops of vanilla ice cream - storebought or homemade
- Mini chocolate chips
- Nuts
Tools:
- Ice cream scoop
- 8x8 or 7x11 baking pan (optional)
- Parchment paper
- Plastic wrap
- Round Cookie/Biscuit cutter
Make the Ice Cream Block
There are two different methods for making these yummy ice cream sandwiches. One of them involves creating an ice-cream brick. To do that, line a baking pan with parchment paper, then add softened ice cream to it, and spread it out evenly. Then place another sheet of parchment paper on top. Put it back in the freezer for a few hours to harden up again.
Use your favorite vanilla ice cream from the store (or any flavor), or make easy homemade ice cream. Something like this Instructable for 3-ingredient ice cream will work.
Bake Those Cookies
Time to bake those cookies. The chocolate chip cookie is the classic cookie for a chipwich, but you can use a number of different cookies if you want. If you really want to be easy, just use storebought cookies. But of course homemade is the best. I like to use my favorite chocolate chip cookie recipe, which you can find with this Instructable.
After baking the cookies, place them on a wire rack to cool completely, then put them in the freezer for 20 to 30 minutes.
Method 1 - Scoop That Ice Cream
The first method which is the easiest method, is to take the ice cream out of the freezer and let it soften for about 10 minutes. Take a cookie and flip it over, then place a scoop of ice cream on top. Take another cookie and place it on top of the ice cream and press down. Easy right?
Nuts and Chocolate Chips
Then optionally you can take the ice cream sandwich and roll it in some nuts or mini chocolate chips. Then take some plastic wrap and wrap them up and put them back in the freezer for 30 minutes to an hour or more.
If the ice cream is too soft to work with, place it back in the freezer for a while.
Method 2 - Ice Cream Brick Method
Now for the other method. Take that ice cream brick out of the freezer, the ice cream should be very firm. Remove the top layer of parchment paper. Then take a biscuit cutter that is roughly the same size as your cookie, and cut out a round bit of ice cream from the block. Place it on the cookie, and push the ice cream out with the back of a spoon or clean fingers. This creates a perfectly round ice cream middle. Pretty awesome! Place another cookie on top.
This method takes more time, but the results are nicer in my opinion.
Place Those Chocolate Chips
Again, roll them in chocolate chips or nuts. If they are having a hard time sticking, you may need to just place them with your fingers. Use clean hands or wear gloves! Then just wrap it up and freeze.
Technically you can eat them right away, but if the ice cream is too soft, it will squish out when you bit into it, haha. Better to freeze it completely and eat it frozen. :)
