Chinese Pizza: Scallion Pancake With Cheese
Scallion pancakes, also known as Chinese pizza, is one of my favorite foods. In mandarin it is 蔥油餅 which directly translates to: onion oil cake. Not only are the ingredients simple, but also the texture is flaky and crispy. I added cheese for a twist and because it makes everything better.
Supplies
Yields one serving:
2/3 cup of all purpose flour
1/4 cup warm water
1 stalk of scallion
1/4 cup cheese
2 TBSP oil
1 TBSP white pepper (optional)
Making the Dough
Put 2/3 cup of all purpose flour in a bowl.
Slowly mix in the 1/4 cup of WARM water.
It is crucial that the water is warm to help form the ball shape. Knead the dough until it is smooth and shiny.
Cover your dough ball with a damp paper towel and let it rest for 30min.
In the mean time, chop up your scallions.
Roll Out and Add Toppings
Roll out the dough as thinly as possible in a long oval shape.
The thinner you roll the dough, the flakier the pancake will be. A good goal to aim for is having the length be at least the width of three of your hands.
Brush on 1 TBSP of oil onto the dough.
Then sprinkle on the sliced scallions, cheese, and white pepper or any seasoning you want.
Rolling Up the Dough
Roll up the dough to form a cylinder.
Roll the dough into a cinnamon bun shape and took the end underneath.
Use a rolling pin to roll the dough out as a circle. A good goal to aim for is having the length be at least the width of two of your hands.
It is okay if some scallions come out during this process.
Fry the Pancake
Heat up your pan to medium high heat and coat the pan with at least 1 TBSP of oil.
Brown each side of the pancake for 1-2min before flipping it over.
Optional: Brush more oil onto the pancake between flips. When done flipping, squeeze the pancake together to create texture and additional layers.
Cut Up and Enjoy!
Cut your pancake into 6 pieces for easier sharing and enjoyment!
