Chicken Soup
I know just about everyone that cooks from scratch, has a homemade chicken soup recipe and I am no different. But I bet I have a trick to making a soup broth with bone in meat few have ever seen.
I started using this method of making soup base and broth back before I lost my eyesight, living on a farm I hunted, fished, and butchered the animals I raised to feed my family. You can be the best butcher in the world, but when you debone meat for roasts, steaks, chops, or ground, you can never get all the meat off the bone. You can give the bones to your dog if you have a dog, or just toss the bones, but if you are like me you hate to waste good food.
Now you can take your bones throw them in a pot of water and boil the bones until the meat falls off, then scoop the bones out of the broth hoping to get all the bones. Or you can fallow my little trick and save yourself a lot of work and time.
This recipe takes about ten hours.
Ingredients
Pasta of your liking, something fancy is nice.
Diced Celery
Diced Onions
Diced Garlic
Diced Tomato
Diced Carrots
Bone in Chicken
Poultry Seasoning
Celery Salt
Lemon Pepper
Parsley
Water
Slow cooker or Crock pot
Cheese cloth or cooking netting.
String
I used colored cooking netting and string just for the picks but plain white cotton netting and string or cheese cloth is just fine.
Directions
Place the diced celery, onions, garlic, tomato, and carrots, in the slow cooker.
Stuff the meat and bones in the cooking netting or cheese cloth and tie off the ends with the string.
Place the net in the slow cooker with the vegetables, add water until everything starts to float and cover.
Simmer on medium heat for eight hours
Finishing the Soup
An hour before serving; take the cooking netting of bones out of the slow cooker, add the pasta, and spice to taste.
If there is meat on the bones; take the bones out of the netting, separate the meat from the bones, and return the meat to the slow cooker.
The soup is ready when the pasta is al dente.
