Chicken Pot ‘Pi’

Comfort food at its best! The crust is light and flaky. The rich sauce is well-seasoned. Each bite is full of vegetables and chicken. This ‘Pi’ will quickly become a family favorite!

Note - makes 2 Chicken Pot ‘Pi’s’ (one for now, freeze one for later and just reheat OR why wait, have both now!)

Supplies

Stand mixer or hand mixer, bowl

Measuring cups

Liquid measuring cup

Knife

Spatula

Cast iron skillet

Spoon

Cutting board

Chef knife

2 ‘Pi’ pans

Cooking spray

Small bowl

Brush

‘Pi’ Dough (makes Two) - Dry Ingredients

2 1/2 cups flour

1 teaspoon salt

2 tablespoons sugar

Mix flour, salt and sugar in bowl of stand mixer.

Other Ingredients for ‘Pi’ Dough

1/2 cup vegetable shortening

1 1/2 sticks butter, cut into small pieces

6-8 tablespoons of cold water


Add the shortening and process until mixture coarse sand (10-20 seconds).

Scatter butter pieces into flour mixture and process until butter pieces no larger than small pea.

Sprinkle water over mixture. Using rubber spatula to fold dough until it comes together.

‘Pi’ Dough

Divide the dough into 2 balls and wrap in plastic wrap. Refrigerate at least one hour or up to 2 days.

Chicken ‘Pi’ Filling - Sauté Vegetables

4 tablespoons butter

1 large finely diced onion

3 large carrots, finely diced

3 stalks celery, finely diced


Melt butter in cast iron skillet over medium high heat.

Add onion, carrots and celery and cook about 3 minutes, stirring occasionally.

Add Chicken

1 rotisserie chicken, shredded

1/4 cup flour

Add in chicken and stir.

Sprinkle flour on top of chicken mixture and stir in.

3 cups chicken broth

1/4 cup heavy cream

1/2 cup frozen peas

2 tablespoons thyme

Salt and pepper, to taste

Add chicken stock, stir and cook about 3 minutes. It should start to thicken.

Add in heavy cream, stir.

Add frozen peas, thyme, salt and pepper.

Pour the filling into 2 ‘Pi’ pans that have been sprayed with cooking spray.

Roll Out ‘Pi’ Dough

1 egg

1 tablespoon water

On a lightly floured surface roll out the ‘Pi’ dough.

Lay the ‘Pi’ dough over the top of each ‘Pi’ pan.

In small bowl mix together egg and water.

Brush top of the ‘Pi’ dough with egg wash.


Bake at 375 degrees for 25-30 minutes. Serve and enjoy!
