Chicken Leftovers Pie

This is a dish that my mum always made when I was growing up, and was always delicious without fail. It would change pretty much every time but this is pretty much the base recipe.
Gather Ingredients

you'll need;
-at least 2 cups leftover chicken (shredded)
-2 cups leftover or frozen veggies
-can of chicken soup
-1/2 cup of cheese
-1 large onion
-2 or 3 rashers of bacon
-2 sheets puff pastry
-1 egg
-a bit of oil
you'll also need a pie dish to bake in,
and a frying pan
and most importantly some common sense, sharp knives, hot ovens, hot pie.
Don't be a silly goose play it safe, play it smart.

Oil your pie tin, I just give mine a light spray with oil, and line with a sheet of puff pastry and chuck in the oven while its pre-heating to 180*c.
Cut up your onion and bacon and fry it up in a pan.

Cut up veggies if necessary, I'm using a frozen pack that I defrosted.
Mix up all your ingredients in a bowl, bar the egg
Pour into you pie base.

Add top, and brush with beaten egg.
Bake for 20-30 minutes or till golden and warmed through.

The great thing with this pie is as long as you have a can of soup and some pastry you can substitute pretty much any leftovers you have in the fridge. In this one I also added some sour cream that needed using and an extra can of corn, because I love it.
You could make the same pie and substitute chicken with steak or leftover roast lamb, pork, or beef. Just change out chicken soup for a similar soup.
