Chicken Cherry in 4 Easy Steps

This is my families’ recipe.

Did you ever use beer to cook your chicken?

This is the best way to do it, in my opinion.

Supplies

You'll need:

  • 4…6 pieces chicken breast
  • 1 bottle Bellevue Kriek beer. ( Black cherry flavoured beer)
  • 3 onions
  • 2 big carrots
  • 1 can cherries ±300 gram
  • 3 table spoons Mustard
  • 1,5 table spoon brown sugar
  • 1 table spoon tomato paste
  • Butter for frying ( you can use oil instead)
  • Pepper
  • Salt
  • 1,5 Laurel-leaf
  • Thyme
  • Corn starch

Burn Chicken...Burn!

Flavour the chicken with Salt and Pepper and roast it using butter or oil until it is white/brown.
Don't worry about the inside of the chicken...we only want a little crispy outside. The inside will be cooked later. Lower the heat when the outside of the chicken is little brown.

Add Flavour

Peel the onions and clean the carrots after which you chop both to big pieces.

Add the following ingredients together with the carrots and onions in the pan.

  • Mustard
  • Tomato purée
  • Brown sugar
  • Thyme
  • Laurel leaf
  • Finally add the beer

Now, on a low setting, let it cook for 2 hours.

After 2 hours of cooking on a low heat the chicken should easily fall apart when poked with a fork.

Put the chicken in a large dish and discard all the carrots, unions, thyme and laurel leaf.

Thicken the Chicken!!

Mix some cherry juice with some corn starch in a cup. We need this as to thicken the gravy.

Add some of it to the gravy. Use it sparely. Only add some of it at a time then cook the whole and if it is not thick enough add some more…continue this process until it is thick enough.. ( the way you like it to be).

Add the cherries to the juice and let it warm up for about a minute

Pore the juice over the chicken and get ready to taste the best chicken you have ever eaten!
