Hello, My name is Ashley. As a mom, I am always looking for new things to cook. if your looking for something fun and new to add to dinner time, this delicious chicken is definitely worth the prep!
Supplies

1 ¼ cup fresh or frozen blackberries (thawed)
1 ¼ cup fresh or frozen raspberries (thawed)
1 cup fresh or frozen blueberries (thawed)1 medium sweet red pepper, chopped
1 jalapeno pepper, seeded and chopped
½ sweet onion, chopped
¼ cup lime juice
3 tablespoons fresh cilantro, minced
¼ tablespoon salt
1 cup chicken stock
2 pounds of boneless chicken breast
Prep: 15 min
Cook: 30 min
Beginning to a Wonderful Meal
1. Place blackberries, raspberries, blueberries, sweet red pepper, and jalapeno pepper in a bowl.
Toss lightly to combine.
Put one cup of the berry mixture into a separate bowl.
Making Salsa

Take the separate bowl and combine onion, lime juice, cilantro, and salt. Mix and let stand for 30 minutes. This will be your salsa.
Cooking Your Chicken

Meanwhile, season chicken breast with salt and pepper. In a large skillet heat 1 tablespoon of oil over medium-high heat. Cook until the meat is done. Remove chicken from pan.
Cooking the Berries

1. Add ½ cup of chicken stock and the first berry mixture to the pan. Bring to a boil and cook for 4 to 6 minutes. Stirring occasionally. Add another ½ cup of chicken stock and cook for an additional 3 to 4 minutes.
Final Step to a Fun Meal

1. Add chicken back into the pan and heat it through.
Serve with salsa.
